Pumpkin and Cumin Soup

Tired of the traditional pumpkin soup?

Then try a beautiful pumpkin soup with a Thai influence.

This is a soup that everyone in our family loves.

Ingredients:

1 kg pumpkin

2 cups chicken stock

2 cups water

1 onion, chopped

2 cloves crushed garlic

2 tsp ground cumin

½ cup coconut milk

 

Instructions:

1. Peel pumpkin and chop into chunks.

2. Combine pumpkin in a large pan with stock, water, onion, garlic and cumin.

3. Bring to the boil, reduce heat to low and simmer, covered, for 15 minutes or until pumpkin is tender.

4. Transfer mixture in batches to a food processor or blender and process until smooth.

5. Return mixture to pan.  Add coconut milk, stir over medium heat until heated through.

Finally serve and enjoy with crusty bread.
