Thai Green Tuna Curry
Serves: 2-3
adults
Preparation time: 5 Minutes

Cooking time: 8 Minutes




Ingredients
  • 1 tablespoon oil
  • 1 onion, finely diced
  • 1 tablespoon Thai green curry paste
  • 140ml can coconut milk
  • 425 gram can of undrained tuna
  • 2 cups of green beans or silver beet
  • 2 tablespoons chopped fresh coriander
  • Juice of half a lime
  • Cooked jasmine rice for serving
Instructions

1Heat oil in a medium saucepan

2add onion and cook for 2-3 minutes or until tender

3Add curry paste and cook ingredients for one minute.

4Stir in coconut milk, tuna and green beans or silver beet and simmer for 2-3 minutes.

5Stir in coriander and lime juice.

6Serve with cooked jasmine rice.
